Lucy & Emily love running. And food. There is a fierce debate as to whether they run to eat or eat to run. Either way, talking about food and talking about running is what it usually boils down to.
Running buddies for years, they are often up at unearthly hours at the weekends and punishing themselves on trail runs across, up and down (but it seems to be mostly up) on the Mendip Hills, or other mean hills in Wales or Dartmoor, which is where they dreamt up the BeetBox ethos.
Fed up with greasy, unhealthy grub after competing in gruelling races, they lusted after healthy, proper food to replenish their bodies, rather than making recovery tougher.
Keen to spread the plant based, planet saving word they have begun infiltrating festivals too. Beetbox can be found over the summer serving real, nutritious plant based food and ethically sourced barista coffee to discerning festival goers!
Lucy has her eye on the detail always looking for the best Fairtrade ingredients, while recycling and composting everything she can get her hands on.
She is on a mission to save the planet, one delicious plant based meal at a time.
If she's not baking luscious vegan cakes she can be found out running with her antisocial Lurcher or up to her elbows in onions in her polytunnel.
Emily has a love of good food, long distance running and adventure.
She has worked in the catering industry for a number of years and having recently switched to a plant based diet has found a new passion for making vegan food which not only tastes delicious but also fuels her running more efficiently.
When she is not busy being creative in the kitchen, she is usually pounding the pavements or trudging up hills in preparation for the next adventure.
